Potassium benzoate (E212) is a widely used food additive and preservative. It appears as a powder or crystalline powder, odorless or almost odorless, soluble in water and ethanol, with a purity of over 99%. The chemical formula of potassium benzoate is C7H5KO2, with a molecular weight of 160.2 and CAS number 582-25-2.
Potassium benzoate is produced instead of the more common sodium benzoate because it also contains potassium, which can supplement human health. Potassium benzoate can also be used as a fireworks agent in industry. A very common way to synthesize potassium benzoate is to oxidize toluene to benzoic acid and then neutralize it with potassium hydroxide. Another method is to hydrolyze methyl benzoate with potassium hydroxide in the laboratory.
Potassium benzoate is stable at room temperature under normal storage conditions. Due to its slight hygroscopicity, it should be stored in a sealed container away from high humidity and high temperature.
Potassium benzoate has low acute toxicity via oral and dermal exposure. Food safety authorities consider potassium benzoate to be mildly irritating to skin, eyes and mucous membranes. Cats have a significantly lower tolerance for benzoic acid and its salts compared to rats and mice.
In some cases, for example in the presence of ascorbic acid, benzoate can produce benzene in soft drinks. However, according to the U.S. Food and Drug Administration, levels measured do not pose a safety hazard to consumers.
